I have some truths to tell you today. The first truth is that fall baking rocked our world. Like, five times last week. Okay FINE 700 times or something but I wasn’t even counting and neither should you, so just … yeah.
The second truth is that sometimes, when you’re a food blogger and food lover, you want to be creative and festive and so you make all the pumpkin things.
But then sometimes you still need to figure out what to do with leftover pumpkin pie filling because under all those fitspo vibes, you’re still mostly a real person who knows in her heart of foodie hearts that no food should go to waste.
1. Pumpkin Pie Crescents
Looking for an easygoing Sunday morning activity the kids can get in on? This is the one! The filling comes together in a snap, just a quick mix of pumpkin pie filling and an egg yolk.
You can add an extra dash of pumpkin pie spice for a flavor boost, but that’s totally your call. A word of advice, try not to overfill these little guys, or you’ll have a tasty puddle on your baking sheet.
The result? A whole tray of buttery, tender pastries filled with a heavenly pumpkin filling.
2. Pumpkin Cheesecake Recipe
I’ve noticed something about pumpkin pie. A lot of people really pile on the whipped cream to cut through the rich pumpkin flavor and consistency. It just needs that little something creamy and light, you know?
And that’s why this pumpkin cheesecake is a total game-changer. I admit, I’m a little obsessed with cheesecake and think it makes everything better, and this is proof!
You get all those classic pumpkin flavors you love, but swirled into a wonderful creaminess that lightens up the whole experience. It’s the best of both worlds.
3. Easy Pumpkin Pancakes
I usually go for banana pancakes on a slow morning, but ever since I tried pumpkin pancakes, I’ve been completely hooked. They are so beautifully spiced, and they come out incredibly light and fluffy every time.
I’m telling you, you should absolutely make a double batch and freeze some for later. When that craving for these hits, it is serious business!
4. Pumpkin Pie Dip
I’m a total sucker for a good dip, but I’ll almost always head for the sweet side of the table first. And this big bowl of sweet, spiced pumpkin dip is exactly what I’m talking about.
You might expect it to have a cream cheese base, kind of like a cheesecake filling, but this one is a little lighter. It uses Greek yogurt and Cool Whip, which makes it totally scoopable. Just grab your favorite cookies or fruit and dive in.
5. Pumpkin Hand Pies
These little pies are so incredibly easy to whip up, and you can really use any kind of fun filling you have on hand. Today, it’s all about pumpkin, obviously. The filling is just a quick blend of pumpkin pie filling, eggs, and some condensed milk.
If you’re feeling like a kitchen superstar, you can make your own pie dough. But if you’re short on time or just don’t have the patience, store-bought dough works beautifully. I totally get it.
6. The Best Pumpkin Bread
I don’t think I’ve ever met someone who would say no to a slice of pumpkin bread. It’s just so tender and warm, and it’s the perfect companion to an afternoon coffee.
Most recipes use pumpkin puree so you can control the spice level, but pumpkin pie filling isn’t super overpowering. You might want to add a little extra spice, but honestly, the two are similar enough that you can always use the filling when you have it.
7. 2-Ingredient Pumpkin Brownies
I am a huge fan of the pumpkin and chocolate combination, but it needs to be just right. There’s a delicate balance to get that perfect flavor. This recipe completely nails it, and oh my goodness, these brownies are so fudgy!
The best part? You only need two ingredients. Well, three if you want to add frosting. You can also toss in your favorite extras, like chocolate chips or some chopped nuts.
8. Pumpkin Cocktail
A pumpkin milkshake is always a fun treat for the kids, but if you’re looking for something with a little more kick, you have to try this cocktail. It’s so creamy and comes together in a flash.
Plus, it’s gently spiced just like a real pumpkin pie. Every single sip gives you that perfect taste of fall, and you can barely taste the rum. Drink up!
9. Pumpkin White Chocolate S’mores
This is what happens when a classic dessert meets a fall favorite! These pumpkin s’mores are just like the campfire treats you know and love, with two little twists. First, you’ll use white chocolate instead of milk chocolate.
Second, you’ll add a little dollop of pumpkin pie filling to each one. They end up so crunchy, gooey, and delicious. You can make them over any fire or heat source you’ve got.
10. Pumpkin Pie Cookies
I know I sound like a broken record, but this recipe is another super simple one that would be amazing with all kinds of fillings!
If you handle the cookie dough gently, it will bake up to be so buttery and tender. That way, you don’t have to rely on the filling for moisture and can just focus on that amazing pumpkin taste. YUM.
11. Pumpkin Pie Bars Recipe
These bars are one of my all-time favorite things to bake! They come together so fast, only need a few ingredients, and are amazing with all kinds of fillings. Because you’re using leftover pie filling, these can be ready in just a few minutes.
One thing to keep in mind, if your homemade pumpkin pie filling is a bit thin, you might want to bake the crust for about 10 minutes before adding the filling.
12. Pumpkin Pie Magic Cake
If you’ve never experienced a magic three-layer custard cake, you need to get in the kitchen right now. It is such a treat every time it comes out of the oven! Once you’ve seen how it works, it’s time to try this incredible pumpkin version.
It only takes five ingredients, including your pumpkin pie filling and a box of spiced cake mix. After nearly an hour of baking, you’ll have a beautiful light sponge on top with a heavenly custard-like layer on the bottom.
13. No-Bake Pumpkin Cheesecake Pie
This is my absolute go-to dessert for the holidays. It’s the perfect marriage of two of my favorite things, cheesecake and pumpkin spice, and it’s a no-bake recipe!
You get all the amazing flavor of pumpkin pie with a creamy cheesecake layer right in the middle. It’s cool, refreshing, and perfectly sweet.
And did I mention it’s no-bake? This is my kind of dessert.
14. Mini-Pumpkin Pies
Let me tell you a little secret. I always keep a few of those mini frozen pie crusts in my freezer. They are a lifesaver on a rainy day or for a last-minute dessert! You can throw in some jam or a quick custard mix and have a yummy little treat in no time.
So, if you happen to have some pumpkin pie filling on hand, what could be a better way to use it than in these adorable little pies?
15. Cinnamon-Sugar Spiced Pumpkin Pie Donuts
Baked donuts are such a fun way to start the morning. They are so cute, sweet, and wonderfully tender. For this recipe, you’ll need some donut baking molds, which are super affordable and worth having!
Seriously, you’ll be turning everything into donut shapes once you see how cute these are. You could also make this recipe as a sheet cake, but I think the donuts are way more fun.
16. Pumpkin Pie
I couldn’t have a list of pumpkin pie filling recipes and not include at least one pumpkin pie! Just because you have some leftover filling doesn’t mean you can’t just make another pie.
I absolutely love that this recipe calls for evaporated milk, which gives it the most creamy finish and some subtle caramel notes.
17. Pumpkin Spice Latte Waffles
This is exactly what you think it is, and it’s wonderfully warm, perfectly seasoned, and delightfully crisp. It’s pretty much your standard apple crisp but with pumpkin instead! I mean, what could be a better swap?
This recipe is a little different, though. You’ll press some of the crisp topping into the bottom of your baking dish, almost like a pie crust. I think this helps make it easier to scoop and keeps the pumpkin filling from getting too set on the bottom.
18. Pumpkin Pie Muffins
Muffins are always such a fun and flavorful way to kick off the day. Thanks to the pumpkin pie filling, these are extra moist and more flavorful than your average muffin.
They also come together so fast, just 10 minutes of prep and another 20 minutes in the oven. You just can’t argue with that kind of convenience.
