The corned beef alone – those tender, juicy bites – is enough to make you go back for seconds.

But toss those leftovers with cabbage and sauerkraut, and bake it under a layer of mozzarella, and you are now in Ridiculous territory. Ridiculous in a good way.

Like, ridiculous in the “Wow, this is so intensely cozy, savory, and creamy and yet I cannot stop eating it” kind of way.

These recipes are like guests on a Tuesday night, meets sweatpants casual, meets St. Patrick’s Day dinner. It’s mega cozy with equal sides of fancy and down-to-earth. AND IT IS SO GOOD.

1. Reuben Casserole

This yummy bake asks for a few more things than the simpler corned beef and cabbage casserole, but believe me when I say you can have it ready in half the time.

We are talking four key players here: corned beef, sauerkraut, Swiss cheese, and pumpernickel bread. How good does that sound?

Once you get your dressing all set, just assemble everything in delicious layers. You’ll finish the whole thing with a blanket of cheese and bake it for 25 minutes. Dinner is SERVED.

These tacos are living proof that you can make a taco out of pretty much anything. And you know what? They taste absolutely phenomenal.

I mean, it couldn’t be any more of a Reuben if you tossed an entire Reuben sandwich into a food processor. It tastes absolutely amazing with mini toasts, Triscuits, or some good rye chips.

This is pretty much a shepherd’s pie made with a corned beef filling. It has such a fantastic herby taste, and it would totally win the gold medal if there was a competition for the “heartiest of hearty pies.”

That fluffy, cheesy potato and breadcrumb topping is my favorite part, but the rich, flavorful filling is not bad either.

16. Leftover Corned Beef Cabbage and Potato Soup

This spin on the classic cabbage soup brings together cabbage, carrots, potatoes, leftover corned beef, and a bunch of tasty, flavorful herbs. The recipe also asks for a cup of Irish ale.

Unless you are just totally against it, I would really recommend you use it, since it gives the soup a deep, bold flavor that you just can’t get without it.

17. Corned Beef and Cabbage Casserole

It’s always a good day when you can make a complete meal with just five ingredients, and that is all this recipe needs.

It only takes about 10 minutes to get this casserole ready for the oven, though it does take about an hour to cook. Still, it’s both nutritious and tasty, as long as you are a fan of cabbage and corned beef, of course.
