We love casseroles. This idea originated as a simple dish made in the slow cooker so my cooking life could be awesomely easy and full of mouth rocking flavor.

It has this sort of all-up-in-there casserole kind of a feel to it. Easy, minimal, and delicious is the three-way target I’m looking to land on.

These slow cooker casseroles are making Monday dinners everywhere just a little more wonderful.

Want to know the secret to the most amazing corn casserole ever? It’s the Crockpot! This recipe gives you the fluffiest, lightest, and creamiest casserole you can imagine.

It’s made with just six ingredients, and yes, one of them is a whole stick of butter, so you know it’s going to be unbelievably rich and velvety. As a total corn casserole fanatic, trust me, this one is the way to go.

3. Crockpot Sloppy Joe Noodle Casserole

This four-ingredient Crockpot meal is one of the most effortless dinners you can fix, and it’s also super quick, coming together in just over an hour.

5. Crockpot Pizza Casserole

This Crockpot pizza casserole brings together everything you love about pizza: ground beef, pepperoni, garlic, tomato sauce, and so much cheese.

But you get to enjoy it all in a super easy pasta-based casserole that takes only 15 minutes of prep time. It needs about 5 hours to cook, but that’s all hands-off time you don’t have to worry about one bit.

6. Crockpot Broccoli Casserole

Broccoli casserole is always a winner, but this recipe is so incredibly simple, you’ll want to make it all the time. You just need cream of celery soup, sharp cheddar, green onions, frozen broccoli, and Ritz crackers.

The broccoli comes out tender but still has a wonderful crunch. The cheese is gooey and fantastic, and those Ritz crackers on top add a crunchy layer that just brings it all home.

7. Kitchen Sink Crockpot Casserole

I’m not sure how to describe this casserole other than calling it insanely good, which is my highest praise. It literally has everything you could ever want in a meal: meat, veggies, starches, and cheese, all with so much potent, bold flavor.

If you love those “everything but the kitchen sink” kind of meals, this one is for you.

8. Slow Cooker Dorito Taco Casserole

This Dorito taco casserole elevates taco salad to a whole new level with the best ingredients: lean beef, diced tomatoes, chiles, taco seasoning, crushed Doritos, cheese, and more.

The real star, though, is the Bacon Catalina dressing, which adds a rich, tangy flavor you just don’t get in regular taco salad.

Besides browning the beef, you just dump everything in the slow cooker and let it work its magic. It takes a little over 4 hours, so you can start it at lunch and have dinner ready to go.

And if you want to make it a meatless meal, just leave out the ground beef and sausage. So simple and so, so good!

13. Crockpot Pierogi and Kielbasa Casserole

It might look like there’s a lot going on in this colorful casserole, but it’s just a simple mix of chicken broth, frozen pierogies, cheddar cheese, kielbasa, cream cheese, and green onions, plus salt and pepper.

15. Slow Cooker Tater Tot Casserole

First things first, don’t get this confused with the hash brown casserole, because they are totally different. This one has way more meat, for starters.

You could call this John Wayne casserole “Tex Mex,” but I like to think of it as “Wild West cowboy meets South of the Border yumminess.”

18. Crockpot Mexican Casserole

Here’s another fantastic choice for a taco salad-style casserole that’s loaded with even more yummy ingredients. We’re talking quinoa, black beans, bell peppers, corn, and more.
